Sirloin steak in the pizza oven
2 beef sirloin steaks á 180 g
1 dl oil for frying
50 g butter
1 garlic bulb
a few sprigs of rosemary
salt and black pepper from a grinder
Take the steaks out of the refrigerator well in advance. Heat the pizza oven to about 250 degrees. Place a cast iron pan or pan in the pizza oven to warm up. Cut the top of the garlic off and add a dash of oil on top. Season with salt and pepper. Remove the pan from the oven when it is hot and add oil to the bottom.
Place the steaks and garlic into the pan and put the pan back in the oven. Grill the steaks for approximately 1–3 min on each side, depending on the doneness you want. Add dabs of butter to the steaks when turning them and season the steaks with salt and pepper. Add the sprigs of rosemary at the end when you remove the steaks from the oven. You can finish by spooning the mix of oil and butter onto the steaks. Let sit for a moment before serving. Serve with creamed potatoes and oven-roasted root vegetables, for example!
