More versatile grilling with accessories

The ceramic kamado barbecue is the most versatile grill in the garden. With one grill you can quickly grill steaks over direct heat, while indirect grilling and low temperatures allow you to braise large cuts of meat for several hours without fear of drying out. The Kamado grill is also the ultimate pizza oven, especially when using a grid expander with a pizza stone on top.

By using the 5 in 1 grilling system, you can grill with direct and indirect grilling modes at the same time, which is a great feature for burger lovers, for example. You can also set the grilling grates of the grilling system at different heights and in this way make use of the different temperatures inside the grill.

By using a grid expander, you can almost double the grilling area, as well as take advantage of the different temperatures inside the grill. By placing a pizza stone on top of the grid expander, your kamado grill becomes an excellent pizza oven. The pizza is closer to the grill’s lid, where the reflected heat cooks the pizza toppings while the pizza stone cooks the pizza crust to a crispy crust. On the motorised grill, a whole chicken or a large piece of meat is rolled and cooked evenly on all sides.

Grid expander

With a grid expander, you can multiply the grilling area of your grill. Choose a grid expander of the right size and place it on top of a normal grill grate. Take advantage of the height difference to allow for different temperatures, for example when cooking pizza. Place the pizza stone on top of the grid expander so that it is closer to the grill lid, where the reflected heat will cook the pizza toppings while the pizza stone crisps the pizza base. Deflector

Ceramic deflector stone, which prevents direct heat transfer to the food being grilled. The deflector allows you to cook your Kamado grill at low temperatures. The Mustang deflectors M and L are “footed”, which allow you to raise the grill grate to the level of the upper edge of the lower grill cavity. Mustang deflectors are made of cordierite.

5in1 Grilling system

The 5 in 1 grilling system will revolutionise your grilling experience. You can grill in direct or indirect mode at the same time. You can place the grilling grates at two different heights, or you can conveniently use a round wok or cast iron griddle for grilling. The Mustang grill system features two crescent-shaped grill grates, two crescent-shaped cordierite deflectors, a basket and a holder for the wok pan. All steel parts are made of high quality 304 stainless steel.

1 – Direct grilling at two different heights

Direct grilling is what is commonly thought of when people talk about grilling. The products to be grilled are directly above the charcoal. Steaks, chicken fillets or vegetables are grilled quickly over relatively high heat. The crescent-shaped deflectors of the 5 in 1 grilling system are removed, the grilling grates are set in place and the grilling begins. The grilling grates can be positioned at two different heights. Grilling can be done either with the grill lid open or closed.

2 – Indirect grilling

Indirect grilling is often used for cooking large pieces of meat that require a long cooking time at low temperatures, low & slow. Both deflectors are put in place to prevent the heat from the charcoal grill from hitting the meat being grilled directly. The deflectors direct the heat upwards through the side walls of the grill. The lid again directs the heat downwards and makes it circulate inside the grill, like in a convection oven. Indirect grilling is always done with the grill lid closed. Tasty briskets and tender pulled pork are always made with indirect grilling.

3 – Direct and indirect grilling at the same time

The 5 in 1 grilling system allows you to use both direct and indirect grilling modes at the same time. Use one half of the crescent-shaped deflector and the grate above it for indirect grilling, and the other half of the grill grate without deflector for direct grilling. By setting the grilling grates at different heights, you can even better control the temperatures on the grates.

4 – Pizza

The Kamado grill is the best oven for cooking pizza. By opening the top and bottom valves, the temperature can quickly rise to 300˚C or more, which is the perfect temperature for quick pizza baking. Raise the grilling grates to the top position and place both crescent-shaped deflectors on top of the grates, and place the separately sold pizza stone on top. Heat the pizza stone to the appropriate temperature and place the pizza on the pizza stone. The pizza stone toasts the pizza crust and the heat from the lid of the kamado cooks the toppings. If the kamado has been in heavy use and has accumulated a lot of fat on its surfaces, it is advisable to burn it off before cooking the pizza. This prevents unpleasant flavours from entering the delicious pizza.

5 – Grilling rack

Take advantage of the grilling rack with round-bottomed pans and pots. For tasty Asian delicacies, use the Mustang wok pan (603438), which stays in place on the accessories rack.

Tips for efficient use of Kamado grills

1 – Removing ash before use

Always remove the ashes from the previous use before lighting the Kamado grill again. Mustang has a wide range of ash buckets and ash trays. Always make sure that the ashes have cooled down before disposing of them.

2 – Lighting

You can easily light your Kamado grill with Mustang’s wood fibre lighter or Eco-lighters. Alternatively, you can use Mustang’s electric grill lighter. Never light a Kamado grill with lighter fluid. You can quickly get the lit coals ready for use by connecting a Mustang ignition blower to the bottom valve of the grill.

3 – Temperature control

The temperature of the Kamado grill can be adjusted very precisely using the top and bottom valves. Light the coals and let them burn properly. Raise the temperature high enough so that the heat is stored in the grill’s ceramic body. Then use the valves to set the desired temperature. Allow time for this. The grill will then maintain the set temperature for several hours.

4 – Cleaning the grill

The Kamado grill cleans the internal surfaces of the grill and the deflector independently. The heat stored in the grill and the heat and glow of the charcoal burn off the grease and marinades that have accumulated on the internal surfaces of the grill and the deflector. If necessary, you can facilitate cleaning with a soft-bristled grill cleaning brush. Do not use any cleaning fluids or water to clean the interior surfaces of the grill. You can safely clean the outside of the grill with a damp cleaning cloth.

5 – Extinguishing and suppressing coals

After grilling, close the top and bottom valves of the grill with the lid closed. The coals inside the grill will choke due to lack of oxygen and go out. Never use water to extinguish the embers. Any coals left in the firebox can be used for the next grilling session. Always check occasionally that the air holes in the cast iron charcoal grate are open. In this case, it is necessary to remove the charcoal from the firebox.

6 – Baking pizza on grid expander

The Kamado grill is the best pizza oven. The smoke from the coals flavours the pizza. By using Mustang smokers with charcoal, you get their distinctive flavour on your pizza. Put a grid expander on the grill and a pizza stone on top. This way, the pizza is closer to the grill’s lid, where the reflected heat cooks the toppings. The pizza itself is cooked by the heat of the pizza stone.
